Gnocchi!

I'm making an effort to eat more stuff that isn't frozen and has to be put together and cooked. It's a bizarre thing as a college student, but I figured I'd give it a shot. It's kind of fun to share stuff like this, so I figured LJ material.

Since I'm rather new to this vegetarian thing (a couple months now, wow), I used a recipe for Skillet Gnocchi with Chard & White Beans. The store was out of chard, though, so I used spinach as it recommends. I also used garlic powder instead of minced and pre-diced onions instead of sliced because I'm super lazy.

It was ridiculously easy to make and really tasty. People complain that vegetarian dishes aren't filling enough, but this one definitely was. I only ate what you see in the picture, so I have tons of leftovers for the week to come.

It is a little high on the carbs, but not as bad as it could be. Would probably be incredibly nom to add a few more carbs and eat it with garlic bread. Alas, I had none, but it was still a great meal. Better than another frozen veggie burger, that's for sure. It took about 30 minutes to make. My only real complaint is that I should've cooked the gnocchi longer than it says.

Mm, fascinating food stuff.
